Cranberry Orange Glazed Scones Recipes

I like baking scones for our weekend breakfast or for afternoon tea. This is one basic recipe that I used over and over again. I tried many different additions by adding toasted nuts, different dried fruits and fresh berries to it and each time it come out perfect. These scones are soft, moist, and scrumptious especially like the chewiness of the dried cranberries and sweet orange glaze. There's nothing better than serving these remarkable scones warm with a cup of tea or coffee.




Ingredients:

2 cups of flour
1 stick/1/2 cup/113 grms cold butter
3 tbsp sugar
11/2 tbsp grated orange zest
2 tsp baking powder
1/2 teaspoon salt
1 cup dried cranberries
2 eggs
¼ cup + 3 tbsp milk


For egg wash

1 egg + 2 tbsp milk – beat together
some sugar for sprinkle

For Glaze

1/4 cup confectioners' sugar
2 tablespoon orange juice

1. Preheat the oven to 400 degrees F. Line the baking pan with parchment paper.
2. In the bowl of an electric mixer fitted with a paddle attachment, mix flour, sugar, the baking powder, salt and orange zest together. Add the cold butter and mix at the lowest speed until the butter is the size of peas.
3. Combine the eggs and milk and, with the mixer on low speed, slowly pour into the flour and butter mixture. Mix until just blended. If the dough is too dry add a bit more milk.  Add in the dried cranberries the dough, and mix on low speed until blended.
4. Pour the dough out to a well-flour work surface. Knead lightly to form a ball. Flour your hand and rolling pin and roll out the dough to ¾” thick.
5. Using a knife or a cookie cutter cut into desired shapes. Place the scones on the baking pan. Collect the scraps of dough and roll it out and cut into shapes again.
6. Brush the top of the scones with egg wash, sprinkle it with a bit of sugar and bake for 25 to 30 minutes or until lightly brown and the insides are fully baked. The scones will be firm to touch.
7. Allow the scones to cool for 15 minutes and then whisk together the confectioners’ sugar and orange juice and drizzle over the scones. Serve with some jam and butter.

Cheese Scones Recipes

These delightful savory scones is great for breakfast or brunch with your eggs or breakfast casserole. It's very similiar to biscuit and will make a nice alternative to bread. Serve this scone warm with herb flavored butter for a special treat for your family.

Ingredients :

2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup grated cheddar cheese
5 tbsp cold butter
1 red chili - finely chopped
2 tbsp of freshly chopped herbs (chives, rosemary,thyme or parsley)
1/3 cup milk
2 eggs
1 egg - beaten for brushing
Some sesame seeds or parmesan cheese - garnish


1. Preheat oven to 375 degrees F. Combine flour, baking powder and salt in a large bowl. Stir in cheese and mix well.
2. Rub cold butter into flour mixture until it resemble coarse breadcrumbs. Add in chili and herbs. Beat 2 eggs with milk and add to flour mixture to form dough. Dough should be wet but not too sticky.
3. Turn dough out onto lightly floured surface; knead just until dough comes together. Pat out dough to 1-inch-thick round. Using 2 1/2-inch-diameter cutter, cut out scones. Gather dough scraps and repeat. Transfer to prepared sheet.
4. Whisk the 1 egg in small bowl and brush over scones. Sprinkle with sesame seeds or parmesan cheese.
5. Bake scones until golden brown. Cool scones on sheet for 5 minutes. Transfer to basket. Serve warm.

Note : If the dough is too dry add a bit more milk.

Scones Delicious Recipes

I whip up a batch of warm scones for our Memorial day breakfast. Scones are lovely when cut into half and spread it with butter and jam. A perfect scones has a crispy on the outside, light and fluffy on the inside. I used my favorite recipe which is simple and quick and calls for ingredients I always have on my pantry.

Ingredients :

2 cups of flour
4 tbsp of cold butter - cut small
2 tbsp of sugar
2 tsp of baking powder
1/4 tsp of salt
1 eggs
2 tbsp of sour cream
1/3 cup of half and half or milk
a handful of raisins and dry cranberries

1) Pre-heat oven to 375 degree F. Line a baking sheet with parchment paper.
2) Mix together flour, baking powder, salt and sugar in a mixing bowl. Combined egg, sour cream, half and half and set aside.
3) Rub butter into the flour with a pastry cutter or fingers until it forms coarse crumbles. Add in raisins and cranberries.
4) Add in the wet ingredients, mix lightly until everything combined.
5) Turn out the dough onto a lightly floured surface and knead into a ball. Pat or roll dough to about 3/4" thick and cut into round shape with a cookie cutter.
6) Brush top of the scones with some milk and bake for 20-25 minutes or until lightly brown. Serve warm.

Note : If the dough is too wet just add a little bit more flour. You can add any flavoring to the scones like spices, dried fruits, nuts, fresh berries, etc. The scones can be re-heat by putting it in the oven for a few minutes and they still taste as good.
