Corn Fritters Delicious Recipes

Corn is really cheap here now. For five to six ears of corn we paid only $1.00. I bought five the other day and boiled 2 and the rest I just removed the kennels and freeze it to be use for my fried rice. But this week I decided to make some corn fritters.

Ingredients :

1 cup of fresh corn kernels
1 cup of puree corn kernels
1/2 cup of flour
1 tsp of baking power
1 small onions - chopped
1 small bunch of cilantro - chopped
1 small bunch of chives - chopped
1 egg
1 red chili - chopped
1/4 cup of milk
1/4 tsp of garlic powder
1/2 tsp of paprika
salt and pepper to taste

Mixed all the above ingredients until smooth and free of lumps. The batter should be quite stiff. Heat up some oil in pan and drop a tablespoon of batter into the oil. Cook on both side of each fritter until golden brown. Drain the oil on paper towel and serve the fritters with chili sauce.

Note : You can add some chopped shrimps for this fritters. Please be careful when you fry these fritters because the corn might 'pop'
