Please forgive the not-so-great photos. I got a bit excited with the natural light still out there around 7pm yesterday evening. However, I quickly learned that evening light casts a weird bluish glow and it was not idea at all.
Despite the poor lighting situation I couldn't resist posting these recipes. First of all, buffalo chicken is one of my all-time favorite foods (classy, huh?) and this was a great weekday meal. The homemade biscuits were a nice touch (and believe me...super easy!).
Easy buffalo chicken salad
Ingredients (serves 2)
1 bag salad mix
1 cup shredded chicken (I used a rotisserie chicken)
Cucumber, sliced
1/3rd cup shredded cheese
1/3rd cup Frank's Red Hot buffalo sauce
1 teaspoon honey
1 tablespoon butter
2 tablespoons blue cheese dressing
Preparation
In a small saucepan, heat the Frank's sauce, honey and butter until combined/melted. Add the chicken and toss to coat.
Arrange salad mix on two plates. Top with vegetables, shredded cheese, chicken and blue cheese.
These little guys are flaky, cheesy, buttery and delicious.
Quick drop biscuits {recipe adapted from Cooks}
Ingredients
1 c. flour (unsifted)
1/4 tsp. salt
1 tbsp. sugar
2 tsp. baking powder
1/4 c. butter
1/4 c. milk, plus 1-2 tablespoons
1/2 cup shredded cheddar
Preparation
Sift dry ingredients into bowl. Cut in butter. Stir cheese and then 1/4 cup milk quickly, beating with a fork until mixed well, add additional 1-2 tablespoons of milk as needed. Drop onto greased pan by spoonfuls. Bake 10-15 minutes at 450.
Makes 12 small biscuits.
This dinner took 20 minutes, which was a dream considering neither Erik or I got home from work before 7pm last night.
