Bacon wrapped scallops are another fantastic recipe from the Parisian Bistro cooking class I attended at Whole Foods. They are easy yet impressive and would be great as an appetizer at a cocktail party, or as a main course for a nice dinner.
Bacon wrapped scallops with balsamic reduction (recipe credit to Ani Loizzo of Whole Foods)
1 1/2 pound large sea scallops
1/2 pound thinly sliced bacon, slices cut in half lengthwise
1/4 cup olive oil
1 1/2 cups balsamic vinegar
1/4 cup brown sugar
Directions
Place a small skillet over medium heat. Add vinegar and allow to reduce by half. Add brown sugar and simmer until syrupy. Set aside. Preheat broiler to high. Season scallops with salt and pepper. Wrap each scallop with one piece of bacon and secure with toothpick. Drizzle with olive oil and broil for 10-12 minutes or until bacon is crisp. Serves 8-10 as an appetizer, 4 as a main course.
