Goat cheese crostini with roasted red peppers - Dairy Foods

These goat cheese crostini were inspired by a recipe I saw in the April issue of Food and Wine magazine. They are very tasty and pretty little things and best of all, extremely easy. I served them with a salad and pizza.



Goat cheese crostini with roasted red peppers (loosely adapted from Food and Wine)

Ingredients

Whole wheat french bread, sliced
Extra virgin olive oil, for brushing and drizzling
7 oz. goat cheese, at room temperature
1/2 cup jarred roasted red peppers
2 tablespoons chopped green onions
salt and pepper

Preparation

Preheat the oven to 400 degrees. Arrange the bread slices on a baking sheet and brush with olive oil, sprinkle with salt and pepper. Bake for about 8 minutes, until toasted.

Spread each toast with goat cheese and top with the peppers. Drizzle with oil, sprinkle with the green onions and serve.

According to Food and Wine, goat cheese is pairs well with Sauvignon Blanc.
